Hi everyone. It’s sunny in Ft. Wayne today, odd from all of the freezing spring rain. That’s right, it was down to 32 the night before last. I had to cover my plants.
Today I’m baking Chocolate Cupcakes for my son’s birthday. I’m sharing with you what I’ve never shared with anyone else in my family, the secret in the sauce! Ummm.
Here are the ingredients for the cake (or cupcakes):
½ cup coconut oil (shortening if you wish)
1 cup sugar (I use coconut palm sugar)
1 teaspon vanilla
1 ½ cups sifted all purpose flour
1 teaspoon baking powder
½ teaspoon soda
½ teaspoon salt
½ cup cocoa (dry, all natural is best)
½ cup milk
1/ ½ teaspoons instant coffee powder
Cream coconut oil and sugar until light. Add egg and vanilla, beat well. Sift together the next five ingredients. Add to creamed mixture alternately with milk, beating after each addition. Dissolve coffee powder in ½ cup water; stir into batter. Fill paper bake cups in muffin pans 2/3 full. Bake in 375 degrees for 20 minutes. I use the wooden toothpick test for doneness.
Cool and frost. Makes about 18.
Chocolate Orange Liqueur Ganache
16 oz bittersweet chocolate fine chips
16 oz or 2 cups heavy cream
1 teaspoon orange liqueur
You can microwave the cream (2 – 3 min) then add to finely chopped chips, melt then add the liqueur, but I like to cook over a stove.
Here is what you do:
Cook the chocolate chips (use a good quality), heavy cream and instant coffee in the top of a double boiler over simmering water until smooth and warm. I stir a lot to make sure nothing sticks. Remove from stove top and add the liqueur.
Add a hefty dose of love and drizzle over the cooled cupcakes.
